While I can bake and cook, let’s just say working in the kitchen is not my favorite thing to do. The easier the process of preparing food the better, which is why I fell in love with this easy protein bar recipe!
An illness in 2020 forced me to have a very restricted diet and my sister – bless her heart – fixed protein bars for me. Or rather I should say she coerced me in to doing it so I could see how easy it was… and now I’m making a batch every single week!
Here’s the recipe, I change it up with different dried and fresh fruits, nuts and spices.
In a large bowl, combine…
- 1 1/2 cup raw oats
- 2 scoops vanilla protein powder
- 1/2 cup chopped nuts and/or dried fruit
- 1 tsp cinnamon (I put nutmeg in sometimes)
- 1 tsp sea salt
- 1 tsp baking soda
In a smaller bowl, combine…
- 1 cup almond milk
- 2 beaten eggs
- 1/2 cup applesauce or pumpkin
- 5 drops vanilla
- 1/4 cup honey
Mix the wet with the dry and spread evenly in rectangle baking pan lined with parchment paper.
Bake at 350 degrees for 30-35 min or until done. Flip onto a baking sheet; if the bottom isn’t done, put back in over for 5-7 minutes or so.
Cut into squares and serve!
Tips:
- Wash the bowls immediately; the batter will harden quickly!
- I love these for dessert on a bed of applesauce, a sprinkle of cinnamon, top it with light cream cheese and drizzle with honey! YUM!
